Abstract
The study was conducted on the frozen bovine meat imported from India for some brands in the markets of Al-Diwaniya city to identify their suitability for human consumption and efficiency frozen storage included four types of different brands imported for some Iraqi companies it (Alkafel, Karbala alafia, Almurad, Altaib) and shown the results of chemical tests in all samples have shown that there are significant differences at the level of probability (P <0.01) in the percentage of total moisture, which was higher than permitted level, there was also a significant difference in the ratios of fat and total protein as fat ratio decreased from normal proportions in all samples. The protein content ratio was within normal limits in brands (Alkafel and Karbala alafia) more over no significant differences were recorded in the ratios of ash and carbohydrates which remained within the permissible limits in all brands , the study on qualitative testing showed high rate of thawing loss in samples of frozen meat especially in the brand Altaib which reached 8.09% , either meat myoglobin dye concentrations were relatively low in all samples. The total volatile nitrogen , the percentage of free fatty acids , pH value, thiobarbituric acid were found within the allowable limits.

اجريت الدراسة على لحوم الابقار المجمدة المستوردة من الهند لبعض العلامات التجارية الموجودة في اسواق مدينة الديوانية للتعرف على مدى صلاحيتها للاستهلاك البشري وكفاءة خزنها بالتجميد وقد شملت اربع انواع لعلامات تجارية مختلفة تستوردها بعض الشركات العراقية وهي (الكفيل، كربلاء العافية، المراد، الطيب) وقد بينت نتائج الفحوصات الكيميائية وجود فروق معنوية وعند مستوى احتمال (P<0.01) في نسبة الرطوبة الكلية والتي كانت مرتفعة عن الحدود المسموح بها في جميع العينات ، كذلك كان هناك فرق معنوي في نسبتي الدهن والبروتين الكلي حيث سجلت نسبة الدهن انخفاضا عن النسب الطبيعية في جميع العينات اما نسبة البروتين فكانت ضمن الحدود الطبيعية في العلامات التجارية (الكفيل وكربلاء العافية) ، ولم تسجل اي فروق معنوية في نسبتي الرماد والكربوهيدرات وكانت ضمن الحدود المسموح بها لجميع العلامات التجارية ، وبينت الفحوص النوعية ارتفاع نسبة الفقد في الاذابة لعينات اللحوم المجمدة وخاصة في العلامة التجارية الطيب وبلغت 8.09% ، اما تراكيز صبغة المايوكلوبين فكانت منخفضة نسبيا في جميع العينات ، وبينت الدراسة ان قيم النتروجين الكلي المتطاير ونسبة الاحماض الدهنية الحرة ودرجة الحموضة ورقم حامض الثايوباربتيوريك جميعها ضمن الحدود المسموح بها.
